Cooking without Eggs
Ok, so eggs are a pretty important ingredient in most recipes! Wouldn't you agree? They help the food stick together so it doesn't crumble in your hands. Baking can be a challenge when someone you love has an egg allergy. No worries! I've got a few helpful egg-replacement tips and tricks.
Replace 1 large egg with the following:
Flax or Chia Gel: 1 TBSP flax meal, chia seed or salba seed + 3 TBSP hot water. Let stand, stirring occasionally, for 10 minutes or until thickened. Use without straining. TIP: If you have a Nutri Ninja or Vitamix, you can blend the Flax or Chia seed mixture before letting it stand to improve the consistency. Your kids won't be able to see the seeds! Brilliant!!!
Applesauce: 4 TBSP unsweetened applesauce (or other fruit puree, like banana) + 1 tsp baking powder
Egg Substitute: 2 TBSP flour + 1/2 tsp oil + 1/2 tsp baking powder + 2 TBSP liquid (milk, cream, diluted yogurt, or dairy-free milk alternatives)
